The Farmed Table
'The Farmed Table' Pop-Up is about bringing people together to enjoy a meal, whilst showcasing foods from boutique producers, farmers and artisans.
An eager group of hungry diners gathered at Bangbang in Surry Hills last Saturday night, to enjoy what was sure to be a carefully assembled menu filled with clever flavour combinations that showcased the best local produce.
Creator and head chef Brendan Cato endeavours to produce a different menu each week using local produce that is 'grown, nurtured or caught' from within a 50km radius of each other. Dealing directly with farmers themselves, all produce for a particular menu is sourced from the same region, which changes over the months to allow diners the opportunity to sample a variety of different regions and what they have to offer. This occasion saw us enjoying food and wine from the Hunter Valley.
Brendan is passionate about demonstrating a more sustainable method of cooking, that include foraging and using lesser known ingredients and the unexplored parts of proteins, ensuring 'whole' animals are used rather than just choice cuts.
