Quick Mushroom Tarts
Last night was one of those Thursday nights were Dave and I looked at each other and said at the same time; "It's your night to cook". We've both been very busy lately, working long hours while laundry piles up, food in the fridge goes off and the pantry gets emptier and emptier.
So using some leftovers from the fridge I whipped up these Quick Mushroom Tarts (emphasis on the 'quick'). After cooking the shortcrust pastry, I simply added the filling - ricotta, garlic, mushrooms, 2 eggs and parsley, then baked the tart for a further 10 minutes…
