Australia Day is just around the corner, which means lots of BBQ catch ups with friends and family. This salad is such a crowd pleaser, making it a perfect dish to bring along to any gathering, whether it's the beach or the backyard, it's always a winner!
I have made this salad a few times this summer and with all these tasty ingredients, there is just so much to love about it. Grilled halloumi, asparagus, pomegranate, spinach and roasted nuts. The pomegranates add such a refreshing layer to this dish, and roasting the raw nuts first makes for a delicious flavour. I've been chopping walnuts and almonds up, then grilling them using coconut oil and salt and it's just beautiful. For this salad I finished up with some Lemon Myrtle dressing.
