There comes a time when we have to take a step back and look at our lifestyles. I don't know about you, but after the holiday season there were a few naughty habits that I seem to have picked up. I felt the need to "regroup" and try to put in place some changes, getting back to a more balanced life. That's way today I wanted to share our experience with Elevate Vitality. Naturopath, nutritionist and herbalist Cassie Mendoza-Jones has used her wealth of knowledge on food and our bodies to develop a range of different meal plans that cater for the needs of a wide and diverse audience. Dave and I tried the vegetarian plan last week. We were excited to learn lots of fun, healthy new recipes to add to our repertoire, a few of which will definitely become regulars at our weekly dinner table. Dave was especially proud of his roasted eggplant stuffed with quinoa, haloumi, cherry tomatoes and pine nuts!
Cassie shares a great recipe for bircher muesli and banana bread (gluten and sugar free). Dave and I made our breakfast to-go and picnicked down by the water. Both were so simple to make and really tasty too!
