About 3 weeks ago I hurt my ankle, which has meant that my much loved morning runs have been put on hold. Not being able to exercise has been really tough for me (if you are a runner then you will feel my pain!). To counter my forced lack of exercise, I have been experimenting with healthy recipes.
Quinoa sushi is so easy to make. I used a damp towel to roll mine up and used a vegetarian filling. The added bonus is they taste even better the next day so your work lunch is all sorted. Win!
