It feels like a while since my post last week. I have been a little sick and am nursing a small fracture in my ankle, plus we have been working very hard to meet our magazine deadlines for this quarter (thank goodness for coffee!). I'm glad I can share this fun little recipe I tried a couple of weeks ago. These Cacao Cookies are a healthy treat, perfect with a cup of tea.
Recipe: 2 cups almond meal, 3/4 cup cacao powder, 1/4 cup pepita seeds, 2 tbs chia seeds, 1/4 cup coconut oil, 2 tbsp rice malt syrup . Preheat oven to 160 degrees, add all dry ingredients into a bowl, stir through the coconut oil and rice malt syrup. Mix well, then roll mix into 14 balls with your hand and flatten the top and bottom slightly. Place onto lined baking tray and bake for 15 minutes.
