Mushroom leek tart
Ever need something quick and tasty to whip up? This Mushroom Leek Tart ticks all the boxes and is a real favourite at our place. It is the perfect Sunday afternoon meal when ingredients in the fridge are scarce and you can't be bothered to walk down the road to order a pizza. See below for the recipe. Enjoy!
Mushroom Leek Tart. 8 medium mushrooms, 1 leek, 1/2 white onion, 1 tbsp butter, 2 sheets puff pastry and chives.
Place 8 mushrooms on a lined baking tray and bake in the oven for 20 minutes on 160 degrees. Prepare the base of your tart by cutting the 2 sheets of puff pastry lengthwise and then joining the two lengths together by just pressing ends making one extra long length.. With a sharp knife score a frame leaving 1cm space for the border. In a saucepan place the butter and add the chopped leek and onions, cook till they soften and become transparent. Spoon out mixture carefully within the scored rectangle of your puff pasty. Remove mushrooms from oven and place on leek mixture. Place tart in oven and cook for a further 20 minutes or until golden brown. Sprinkle tart with finely chopped chives.
