Hi everyone, I hope you enjoyed the beautiful weather over the weekend. It really feels like summer has arrived! For me, the warmer weather means I come out of hibernation. Swapping my track suit pants and bed socks with runners and sunscreen. I went for some long walks over the weekend finding it impossible to stay indoors!
I find it easier to be healthier during the warmer months, eating lighter healthy meals seems effortless with all the delicious fruit and veg that is in season. Today's post is a healthy snack idea that is big in our house. These super chips are so tasty and a perfect healthy snack option.
Kale chips. Kale, sesame seeds, coconut spray oil, sea salt.
Method. Tear the kale leafs from the stem and spread them on a lined baking tray. Spray the kale with coconut spray and then sprinkle sesame seeds over the top. Lightly salt and place into a moderate oven and bake at 120degrees for 35-45minutes. You want them to be dry and crunchy, watch they don’t burn. .
Sweet potato chips. Sweet potato, coconut spray, sea salt.
Method. Line your tray with baking paper, spray a light coat of coconut oil over paper. Thinly slice the sweet potato then spread them out on your tray, Season with salt and bake on 150degrees for 30-40minutes, or till slightly browned.
