If you are entertaining and want to serve a nutritious menu, this Chilled Avocado Soup works perfectly as a starter. For an extra bit of fun I served this in different tea cups to add colour. This would be perfect for a garden party event or Mother's Day afternoon tea.
2 ripe avocados (peeled, chopped and pitted)
1/2 C cucumber (peeled and chopped)
2C good quality vegetable stock
1/2 coconut milk
1/4 roasted almonds
3 tablespoons lime (juiced)
1/3 chives (chopped)
Toasted pine nuts
Toasted shredded almonds
Black sesame seeds
Blend all the soup ingredients until they are completely smooth, add extra lime or season with salt and pepper to taste. Leave in the fridge until ready to serve. Pour mixture into tea cups, sprinkle toasted nuts and sesame seeds to one side then decorate with edible flowers.
