Patties

Breakfast on-the-go can be tough when you are trying to avoid gluten. For me to maintain an anti-inflammatory diet while working in a busy office I need to get creative with meals. These patties are designed to be eaten for breakfast, lunch or dinner. We usually make a batch on Sunday then grab them throughout the week. They become even more simple to prepare if you get into the practise of cooking quinoa and storing in the fridge. 

All Day Patties
2C cooked quinoa
1 grated zucchini
100g goats cheese
150g bacon (crispy and roughly chopped)
4 free range eggs
Salt & Pepper to taste
Coconut oil for cooking

Method
Combined all ingredients in a large bowl, using your hands mix together well, compress mixture in bowl. Cover bowl with a tea towel put it in the fridge for about 20 minute. (I like to clean and chop up a quick salad in this time). Remove bowl from fridge. Divide mixture into balls and set aside ready for cooking. Add coconut oil to pan and put on medium heat. Place 2 balls on pan and slowly push them down with your spatula to create your patty shape, cook until all surfaces are nicely brown. Repeat until all patties are cooked. Serve and enjoy or store in an air tight container and enjoy them later.
